Cherry pie, made from fresh sour cherries, is my favorite. There’s a cherry orchard a stone’s throw away and the farmer has a grove of sour cherry trees which produces the most perfect fruit. The sour cherry season is short-lived and the locals know when to visit the orchard. And so armed with plastic buckets we descended on his place a couple of days ago and filled the pails. Then we pitted them immediately and put them in the freezer for pies all year long. Fresh sour cherries are perishable and are not the same as bing cherries so you most likely won’t find them anywhere but at a farmer’s market. Yesterday Susan made the first pie of the season. Perfect pie, perfect crust – all Rustically Chic delicious!!
